Orange,Tahini & Chocolate Biscuits
Ingredients
Depends on the cookie size
dry ingredients:
- 70g rice flour
- 70g ground almonds
- 70g coconut sugar
- 1/2 tsp bicarbonate of soda
- 1/4 tsp (himalayan) salt
wet ingredients:
- 40g coconut or soy yogurt
- 30g tahini
- 30g melted coconut oil
- 1tbsp orange blossom water
- zest of an orange (organic)
to decorate:
- 70% dark chocolate
- sesame seeds
Method
Preheat your oven to 180°C fan setting.
In separate bowls, mix the dry and wet ingredients making sure they all combine well.
Pour the wet ingredients in the dry ingredients bowl and mix with your hands until you get a dough.
Roll out the dough using a rolling pin. You want the dough to be around 1 cm thick (maximum).
Cut into shapes using a cookie cutter or the rim of a glass and place on a baking tray covered with a baking sheet.
Repeat until there is no dough left.
Bake for 12-15 min (depending on your oven) until golden.
Let the cookies cool down.
In a saucepan, melt the dark chocolate and dip a part of each cookie.
Sprinkle the chocolate part with sesame seeds.
Let it cool down before eating or store in an airtight container.
