Saffron, Rose & Lemon Paleo Cookies
These Paleo Cookies are super easy to make, delicious and nourishing!
The flavours are inspired by Persian desserts I grew up eating. One of them is Faloodeh, a sorbet made with rice noodles, rose water, lemon juice… Yum!
I used xylitol, a natural sugar suited for diabetics or people suffering from candida.
Ingredients
8 cookies
- 100g ground almonds
- 50g coconut powder
- 40g xylitol
- a pinch of ground saffron
- the zest of a lemon
- 2 tbsp aquafaba (chickpea water)
- 1 tbsp rose water
to decorate:
- 70% dark chocolate or pistachios
Method
Preheat the oven to 150°C.
In a large bowl mix all the ingredients, except the dark chocolate and pistachios, to form a dough.
Shape the dough into 8 balls, gently squish them and place them on a baking tray covered with a baking sheet.
Decorate each cookie with a piece of dark chocolate or pistachio.
Cook for 15 min until slightly golden. I like to turn the tray halfway through to have them evenly golden.
Let them cool down before devouring them!
