Tofu Scramble
This tofu scramble is perfect when you are in a hurry and don’t have a lot of time to cook. I like to make it for lunch during the week, or as a brunch on the weekend. It’s quite filling and simply delicious. I love it on toast, topped with guacamole.
Ingredients
- 300g firm tofu
- olive oil
- 1 garlic clove, minced
- 1 onion, chopped
- 1 tsp turmeric
- 1 tbsp tamari
- 3 heaped tbsp tomato paste
- 1/2 tsp sumac
- pinch of salt
- ground pepper
Method
Heat your pan, adding a drizzle of olive oil.
Add the onions, garlic and salt and cook on a medium/low heat until soft.
Add the turmeric, stir well until your onion and garlic turn completely yellow.
Crumble in the tofu (using you hands) and stir through until well combined.
Add the tomato paste, tamari, pepper and sumac. Cook for another couple of minutes, stirring continuously.
Have it simply on toast. Top it with some guacamole to add a creamy texture or/and with crispy chickpeas to add some crunch!
